Ingredients

Wet Ingredients

  • 1 large egg
  • 1 ½ cups milk
  • 2 Tbsp orange juice
  • 1 tsp vanilla extract
  • 3 Tbsp melted coconut oil

Dry Ingredients

  • 2 Tbsp flaxmeal
  • ½ cup almond meal
  • ½ cup white whole wheat flour
  • 1 Tbsp white whole wheat flour
  • ½ cup oat flour
  • 2 Tbsp muscavado or brown sugar
  • 1 dash cinnamon
  • 2 tsp baking powder
  • ½ tsp sea salt

Instructions

  1. Heat the waffle iron.
  2. Whisk together the egg, milk, orange juice, and vanilla.
  3. Whisk in the melted coconut oil.
  4. In a separate bowl, mix the dry ingredients well, breaking up any clumps.
  5. Combine the wet and dry ingredients, stirring until just mixed.
  6. Let the mixture sit for a few minutes to allow the flaxmeal to absorb some liquid.
  7. Add enough batter to fill the waffle iron without overstuffing.
  8. Cook the waffle until it stops steaming, about 4 minutes.
  9. Remove the waffle and enjoy warm, avoiding stacking to prevent steaming.
  10. Serve with toppings of your choice.
