Black Bean and Mango Quesadillas

Ingredients

The filling

  • 1 cup diced mango
  • ¼ cup diced red onion
  • ¼ cup diced red pepper
  • 1-2 tablespoons finely minced jalapeno pepper
  • 2 tablespoons chopped cilantro
  • 1 tablespoon fresh lime juice

The beans

  • 1 can black beans
  • ¼ teaspoon ground cumin
  • ¼ teaspoon coriander
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • tablespoons water
  • salt and pepper

The tortillas

  • 1-2 cups shredded pepper jack cheese
  • 4-6 small/medium flour tortillas

Instructions

  1. Preheat a non-stick griddle or skillet to medium high heat.
  2. Combine mango, red onion, bell pepper, jalapeno, cilantro, and lime juice in a bowl and season with salt and pepper.
  3. Place beans, water, cumin, coriander, onion, and garlic in a microwave-safe bowl and cover with plastic wrap, then microwave until hot.
  4. Lightly mash the beans, leaving some intact, and season with salt and pepper.
  5. Brush the pan with oil and place tortillas on it, sprinkling with cheese and cooking until melted and golden brown.
  6. Remove from heat, fill tortillas with bean mixture and mango salsa, then fold and cut into wedges.
  7. Serve with sour cream if desired.
