Mango Black Bean Tacos

Instructions
- Dice the mangoes, jalapenos, and red onions, and drain and rinse the black beans.
- In a small bowl, combine fresh cilantro, 1 tbs. red onion, the juice of 1 lime, and diced mangoes, then set aside.
- In another small bowl, whisk together the sour cream, coconut milk, and sugar, then set aside.
- Saute the black beans, red onion, and jalapeno in olive oil, seasoning with salt and pepper, until softened.
- Layer the black beans and mango mixture on warmed corn tortillas, drizzle with the cream sauce, and enjoy.
