Mango Black Bean Tacos

Ingredients

The filling

  • 2 whole diced mangoes
  • 20 oz. black beans
  • 3–4 tbs. diced red onion
  • 1 tbs. diced jalapeno
  • 1 whole lime
  • a handful of fresh cilantro
  • corn tortillas

The sauce

  • cup coconut milk
  • cup sour cream
  • 1 tbs. white sugar

For cooking

  • to taste olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Dice the mangoes, jalapenos, and red onions, and drain and rinse the black beans.
  2. In a small bowl, combine fresh cilantro, 1 tbs. red onion, the juice of 1 lime, and diced mangoes, then set aside.
  3. In another small bowl, whisk together the sour cream, coconut milk, and sugar, then set aside.
  4. Saute the black beans, red onion, and jalapeno in olive oil, seasoning with salt and pepper, until softened.
  5. Layer the black beans and mango mixture on warmed corn tortillas, drizzle with the cream sauce, and enjoy.
