Instructions
- Melt chocolate chips, coconut milk, and vanilla in a microwave-safe bowl in 30-second increments until smooth.
- Puree fresh raspberries in a food processor.
- Stir the raspberry puree into the melted chocolate mixture.
- Cover the bowl and refrigerate for 2-3 hours.
- Once chilled, roll the mixture into 1-inch balls.
- Optionally, roll the truffles in your choice of toppings.
