Ingredients

The truffles

  • 12 oz dark chocolate chips
  • 7 tablespoons coconut milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground espresso

The toppings

  • to taste chopped hazelnuts
  • to taste unsweetened coconut flakes
  • to taste cocoa powder

Instructions

  1. Melt chocolate chips, coconut milk, and vanilla in a microwave-safe bowl in 30-second increments until smooth.
  2. Stir in the ground espresso until combined.
  3. Refrigerate the mixture for 2-3 hours.
  4. Once chilled, roll the mixture into 1-inch balls.
  5. Optionally, roll the balls in chopped hazelnuts, coconut flakes, or cocoa powder.
