Instructions
- Place the chocolate chips in a bowl and set aside.
- In a saucepan, combine the heavy cream and butter, heating until just simmering.
- Remove from heat and stir in the vanilla extract.
- Pour the hot cream mixture over the chocolate chips and let sit for 3-5 minutes, then stir until smooth to create ganache.
- Transfer the ganache to a rectangular dish and refrigerate for about 2 hours until firm.
- Scoop the ganache using a small cookie scoop, rolling into balls quickly to prevent melting.
- Roll the truffles in your choice of coatings immediately after rolling.
