Paleo Dark Chocolate Truffles

The truffle shell

Instructions
- Combine coconut oil and coconut butter in a food processor.
- Pulse in honey, stevia, and orange zest.
- Pulse in cacao powder until mixed well.
- Refrigerate the mixture for 30 minutes until firm.
- Use a teaspoon to scoop out the mixture and roll into balls.
- Place the rolled truffles on a parchment paper lined baking sheet.
- In a saucepan over low heat, melt the cacao butter.
- Stir in cacao powder, honey, and stevia to make the shell.
- Dip each truffle in the shell mixture using a toothpick.
- Chill the dipped truffles for one hour.
- Top with coarse sea salt if desired, then serve.
