Instructions
- Preheat the oven to 180°C (350°F).
- Combine the graham cracker crumbs, sugar, and melted butter in a bowl, then press into the bottom of a 9-inch springform pan.
- Bake the crust for 5-6 minutes and let it cool.
- Blend the cottage cheese until smooth, then mix it with sugar, lemon zest, Greek yogurt, vanilla extract, and salt.
- Add the eggs one at a time, beating well after each addition until smooth.
- Pour the filling over the crust and bake for 50-55 minutes until set and slightly brown.
- Turn off the oven and let the cheesecake cool with the door slightly open.
- Refrigerate for at least an hour or overnight before serving.
