Instructions
- Preheat the oven to 350°F and line a muffin tin with 6 paper liners.
- Mix the graham cracker crumbs, melted butter, and sugar in a small bowl until combined.
- Spoon one tablespoon of the graham cracker mixture into each liner and press down to flatten.
- In a medium bowl, beat the cream cheese until smooth, then add Greek yogurt, sugar, egg, and vanilla extract, and mix until combined.
- Pour the cheesecake filling evenly over the crusts.
- Bake for 25 minutes or until the centers are set.
- Cool at room temperature for 20 minutes, then chill in the refrigerator for at least 2 hours.
- Remove the paper liners and top the cheesecakes with fresh berries before serving.
