Ingredients

The crust

  • ½ cup graham cracker crumbs
  • 2 tablespoons butter, melted
  • 1 tablespoon sugar

The filling

  • 5 ounces cream cheese, softened
  • 1 5.3 ounce container Clover Vanilla Organic Greek Yogurt
  • ¼ cup sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • cup fresh berries

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with 6 paper liners.
  2. Mix the graham cracker crumbs, melted butter, and sugar in a small bowl until combined.
  3. Spoon one tablespoon of the graham cracker mixture into each liner and press down to flatten.
  4. In a medium bowl, beat the cream cheese until smooth, then add Greek yogurt, sugar, egg, and vanilla extract, and mix until combined.
  5. Pour the cheesecake filling evenly over the crusts.
  6. Bake for 25 minutes or until the centers are set.
  7. Cool at room temperature for 20 minutes, then chill in the refrigerator for at least 2 hours.
  8. Remove the paper liners and top the cheesecakes with fresh berries before serving.
