Ingredients

The French Toast

  • 1 14-ounce can full-fat coconut milk
  • 1 cup unsweetened almond milk
  • ¼ cup agave nectar, maple syrup, or honey
  • 3 Tbsp raw sugar
  • 7 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • 4 slices super-thick, crusty bread
  • 2 Tbsp vegan butter or coconut oil

The Toppings (optional)

  • to taste coconut whipped cream
  • to taste toasted coconut flakes
  • to taste maple syrup

Instructions

  1. Whisk together coconut milk, almond milk, vanilla extract, sugar, agave nectar, sea salt, and eggs in a large bowl.
  2. Arrange bread in a shallow dish and pour the mixture over it, letting it soak for 5-10 minutes before flipping to soak the other side.
  3. Cover and refrigerate overnight or for at least 4-6 hours.
  4. Preheat the oven to 450°F (232°C) the next day.
  5. Heat butter or coconut oil in a pan and sprinkle raw sugar on top of the bread slices.
  6. Cook the bread sugar side down for about 5 minutes until golden brown, then flip and sugar the top side.
  7. Transfer the pan to the oven and bake for 12-15 minutes until cooked through and puffed up.
  8. Serve with coconut whipped cream, toasted coconut flakes, and maple syrup.
