Ingredients

The main ingredients

  • 1 loaf bread (14-ounce, cut into chunks)
  • 7-8 pieces eggs
  • 1 cup coconut milk
  • 1 cup milk
  • ½ cup coquito (or heavy cream)
  • cup sugar
  • cup brown sugar
  • 2 teaspoons vanilla extract
  • 1-1½ teaspoons cinnamon
  • ¼-½ teaspoon nutmeg

The topping

  • ¾ cup flour
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼-½ teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ cup butter (very cold, cut into pieces)

The syrup

  • 2 tablespoons butter
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon bourbon or rum
  • ¼ teaspoon salt (optional)

Instructions

  1. Spray or butter a 9×13 baking dish and place the bread cubes evenly in it.
  2. Whisk together the eggs, coconut milk, coquito, milk, sugar, brown sugar, vanilla extract, nutmeg, and cinnamon until combined.
  3. Pour the mixture over the bread, pressing down if needed to ensure all bread is soaked.
  4. Let it sit for at least 4 hours or overnight.
  5. Preheat the oven to 350°F (177°C).
  6. Mix the topping ingredients until crumbly and sprinkle over the bread mixture.
  7. Bake for 45-50 minutes until golden brown and crispy on top.
  8. While baking, melt butter for the syrup in a saucepan, then add maple syrup and stir until warmed.
  9. Remove from heat and stir in vanilla, salt, and bourbon.
  10. Allow the French Toast Bake to cool slightly, then drizzle with syrup before serving.
