Instructions
- Spray or butter a 9×13 baking dish and place the bread cubes evenly in it.
- Whisk together the eggs, coconut milk, coquito, milk, sugar, brown sugar, vanilla extract, nutmeg, and cinnamon until combined.
- Pour the mixture over the bread, pressing down if needed to ensure all bread is soaked.
- Let it sit for at least 4 hours or overnight.
- Preheat the oven to 350°F (177°C).
- Mix the topping ingredients until crumbly and sprinkle over the bread mixture.
- Bake for 45-50 minutes until golden brown and crispy on top.
- While baking, melt butter for the syrup in a saucepan, then add maple syrup and stir until warmed.
- Remove from heat and stir in vanilla, salt, and bourbon.
- Allow the French Toast Bake to cool slightly, then drizzle with syrup before serving.
