Ingredients

The base

  • 3 eggs eggs
  • ¾ cup almond milk
  • 1 tablespoon brown sugar
  • 1 heaping teaspoon cinnamon
  • a pinch sea salt
  • 10 to 12 slices challah bread
  • as needed non-stick spray or olive oil

The topping

  • 3 tablespoons brown sugar
  • ¼ heaping teaspoon cinnamon

For serving

  • ¼ cup sliced almonds
  • ¼ cup pomegranate arils
  • as desired maple syrup

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 baking dish.
  2. In a bowl, whisk together the eggs, almond milk, brown sugar, cinnamon, and sea salt until smooth.
  3. In another bowl, mix the brown sugar and cinnamon for the topping.
  4. Dip each slice of bread into the egg mixture, coating well, and place them in the baking dish.
  5. Sprinkle the tops with the brown sugar and cinnamon mixture.
  6. Bake for 30 minutes or until the eggs are set and the top is golden brown.
  7. Top with toasted almonds and fruit, and serve with maple syrup if desired.
