Ingredients

The casserole

  • 1 lb challah, brioche, or Pullman loaf, sliced 1" thick
  • 3 Tbsp unsalted butter, melted, plus more for pan
  • 6 large eggs
  • cups heavy cream
  • cups whole milk
  • cup light brown sugar, packed
  • tsp ground cinnamon
  • ½ tsp ground cardamom
  • ¾ tsp Diamond Crystal kosher salt or ½ tsp. Morton kosher salt
  • ½ tsp finely grated orange zest (optional)
  • 1 Tbsp demerara sugar

For serving

  • to taste crème fraîche
  • to taste maple syrup

Instructions

  1. Preheat the oven to 325°F and bake the bread slices on a baking sheet until dried and lightly golden.
  2. Butter a 13x9" baking dish and whisk together the eggs, heavy cream, whole milk, brown sugar, cinnamon, cardamom, salt, and orange zest in a bowl.
  3. Arrange the dried bread in the baking dish and pour the egg mixture over it, pressing the bread down to soak it.
  4. Cover and refrigerate for at least 2 hours or overnight.
  5. Before baking, let the casserole sit at room temperature for 30 minutes, then brush with melted butter, sprinkle with demerara sugar, and bake until golden and puffed.
  6. Let cool slightly and serve with crème fraîche and maple syrup.
