French Toast Casserole

Instructions
- Preheat the oven to 325°F and bake the bread slices on a baking sheet until dried and lightly golden.
- Butter a 13x9" baking dish and whisk together the eggs, heavy cream, whole milk, brown sugar, cinnamon, cardamom, salt, and orange zest in a bowl.
- Arrange the dried bread in the baking dish and pour the egg mixture over it, pressing the bread down to soak it.
- Cover and refrigerate for at least 2 hours or overnight.
- Before baking, let the casserole sit at room temperature for 30 minutes, then brush with melted butter, sprinkle with demerara sugar, and bake until golden and puffed.
- Let cool slightly and serve with crème fraîche and maple syrup.
