Instructions
- Cut the challah or brioche loaf into 2-inch squares.
- Grease a 9x13 baking dish and place the bread cubes inside.
- In a large bowl, whisk together eggs, non-dairy milk, coconut sugar, vanilla extract, cinnamon, nutmeg, and molasses until smooth.
- Pour the mixture over the bread cubes, ensuring they are fully covered.
- Gently press the bread down to absorb the liquid.
- If preparing ahead, cover with foil and refrigerate until ready to bake.
- Preheat the oven to 350°F.
- Mix sugar and cinnamon in a small bowl.
- Remove the foil and sprinkle the cinnamon sugar mixture on top of the bread cubes.
- Bake for 45-50 minutes until golden brown.
- Serve with fresh berries and maple syrup if desired.
