Ingredients

The casserole

  • 12 oz Challah or Brioche Bread
  • 6 pieces Eggs
  • 2 cups Non-Dairy Milk
  • ¾ cup Coconut Sugar
  • 2 teaspoons Vanilla Extract
  • 2 teaspoons Cinnamon
  • 1 teaspoon Nutmeg
  • 1 tablespoon Molasses

The topping

  • 3 tablespoons Sugar
  • 1 teaspoon Cinnamon

Instructions

  1. Cut the challah or brioche loaf into 2-inch squares.
  2. Grease a 9x13 baking dish and place the bread cubes inside.
  3. In a large bowl, whisk together eggs, non-dairy milk, coconut sugar, vanilla extract, cinnamon, nutmeg, and molasses until smooth.
  4. Pour the mixture over the bread cubes, ensuring they are fully covered.
  5. Gently press the bread down to absorb the liquid.
  6. If preparing ahead, cover with foil and refrigerate until ready to bake.
  7. Preheat the oven to 350°F.
  8. Mix sugar and cinnamon in a small bowl.
  9. Remove the foil and sprinkle the cinnamon sugar mixture on top of the bread cubes.
  10. Bake for 45-50 minutes until golden brown.
  11. Serve with fresh berries and maple syrup if desired.
