Ingredients

  • 16 oz. cinnamon raisin bread, sliced
  • 8 large eggs
  • 1 cup unsweetened plain almond milk
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350ºF and spray a casserole dish with nonstick cooking spray.
  2. Slice the cinnamon raisin bread into 1-inch squares and place them in the dish.
  3. In a medium bowl, whisk the eggs, then add almond milk, cinnamon, and nutmeg, whisking until combined.
  4. Pour the egg mixture over the bread and ensure all pieces are submerged.
  5. Clean the sides with a wet paper towel, cover with tin foil, and bake for 30 minutes.
  6. Remove the foil and continue baking for an additional 10-15 minutes or until fully cooked.
  7. Serve topped with powdered sugar and maple syrup.
