The Coconut Syrup

Instructions
- Preheat a non-stick electric griddle to 350 degrees.
- Blend coconut milk, eggs, and coconut extract until well combined.
- Pour the egg mixture into a shallow dish and shredded coconut into another.
- Dip each slice of bread into the egg mixture, allowing it to absorb, then coat with shredded coconut.
- Cook on the buttered griddle until golden brown on one side, then flip and cook the other side.
- For the coconut syrup, melt butter in a saucepan, stir in sugar and buttermilk, and bring to a gentle boil.
- Remove from heat and stir in baking soda and coconut extract, whisking until frothy.
- Serve the French toast warm with coconut syrup.
