Ingredients

The French Toast

  • 1 cup canned lite coconut milk
  • 4 large eggs
  • ¼ tsp coconut extract
  • 10 slices French bread
  • 1 bag shredded sweetened coconut (optional)
  • Butter for griddle

The Coconut Syrup

  • 8 Tbsp salted butter
  • 1 cup granulated sugar
  • ½ cup buttermilk
  • ½ tsp baking soda
  • ¾ tsp coconut extract

Instructions

  1. Preheat a non-stick electric griddle to 350 degrees.
  2. Blend coconut milk, eggs, and coconut extract until well combined.
  3. Pour the egg mixture into a shallow dish and shredded coconut into another.
  4. Dip each slice of bread into the egg mixture, allowing it to absorb, then coat with shredded coconut.
  5. Cook on the buttered griddle until golden brown on one side, then flip and cook the other side.
  6. For the coconut syrup, melt butter in a saucepan, stir in sugar and buttermilk, and bring to a gentle boil.
  7. Remove from heat and stir in baking soda and coconut extract, whisking until frothy.
  8. Serve the French toast warm with coconut syrup.
