Buttermilk French Toast

Ingredients

The custard

  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp honey
  • a pinch cinnamon
  • a pinch salt
  • ¾ cup buttermilk

The toast

  • 4 slices whole grain bread
  • 2 tsp extra virgin coconut oil or butter
  • 2 tsp natural cane sugar

Toppings

  • 1 large banana, sliced on a bias
  • to taste toasted pecan pieces
  • to taste powdered sugar (optional)
  • to taste maple or agave nectar (optional)

Instructions

  1. Whisk the eggs and vanilla in a glass pie pan or square pan.
  2. Add honey, cinnamon, salt, and buttermilk to the egg mixture and combine well.
  3. Heat a small amount of butter or coconut oil in a pan over medium heat.
  4. Dredge the bread in the custard, ensuring it's well coated, then add to the hot pan.
  5. Cook the bread for about 2 minutes on one side until golden, then flip and cover, cooking for another 2-3 minutes.
  6. In another pan, warm coconut oil and sugar, then add the sliced bananas and sauté for 1-2 minutes.
  7. Serve the French toast topped with sautéed bananas, pecan pieces, and a sprinkle of powdered sugar, with optional maple or agave drizzle.
