Instructions
- Whisk the eggs and vanilla in a glass pie pan or square pan.
- Add honey, cinnamon, salt, and buttermilk to the egg mixture and combine well.
- Heat a small amount of butter or coconut oil in a pan over medium heat.
- Dredge the bread in the custard, ensuring it's well coated, then add to the hot pan.
- Cook the bread for about 2 minutes on one side until golden, then flip and cover, cooking for another 2-3 minutes.
- In another pan, warm coconut oil and sugar, then add the sliced bananas and sauté for 1-2 minutes.
- Serve the French toast topped with sautéed bananas, pecan pieces, and a sprinkle of powdered sugar, with optional maple or agave drizzle.
