Ingredients

The base

  • 2 whole eggs
  • ½ cup almond butter
  • 1 whole ripe banana
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp grass-fed butter or ghee (or coconut oil for dairy free)

Toppings

  • to taste pure maple syrup

Instructions

  1. Preheat the oven to 400°F.
  2. Blend the eggs, almond butter, banana, cinnamon, and vanilla until smooth.
  3. Heat an oven-safe skillet over medium-low heat and add the butter or ghee.
  4. Once melted, pour the blended mixture into the skillet and cook for 2-3 minutes until browned on the bottom.
  5. Transfer the skillet to the oven and bake until the top is firm, about 8-10 minutes.
  6. Remove from the oven, cut into pieces, and serve with maple syrup or your favorite toppings.
