Ingredients

The French Toast

  • 3 large eggs
  • ¾ cup lite coconut milk
  • ½ teaspoon coconut extract
  • ¼ teaspoon vanilla extract
  • teaspoon salt
  • 1 cup shredded sweetened coconut
  • 6 slices French bread cut into ½ inch slices

For Serving

  • to taste butter
  • to taste maple syrup
  • to taste strawberries

Instructions

  1. Whisk together eggs, coconut milk, coconut extract, vanilla extract, and salt in a shallow dish.
  2. Place shredded coconut on a plate.
  3. Dip both sides of each slice of bread into the egg mixture, then into the shredded coconut.
  4. Drizzle a little egg mixture on top of the coconut to help it stick.
  5. Heat a non-stick frying pan or griddle to medium to medium-high heat.
  6. Cook the slices of bread until golden brown on one side, then turn and cook the other side.
  7. Serve immediately or keep warm in a low oven.
  8. Serve with butter, pure maple syrup, and/or strawberries.
