Ingredients

The soup base

  • 1 small onion, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 rib celery, chopped
  • 8 pieces baby cut carrots, sliced
  • ½ cup DuPuy Lentils
  • 4 cups water
  • ½ tsp salted herbs
  • 1 tsp no salt organic seasoning
  • 2 pieces bay leaves

The vegetables

  • 2 cups cooked cabbage, shredded

Instructions

  1. Heat olive oil in a medium saucepan over medium-high heat.
  2. Add onion, celery, carrots, salt, and pepper; cook until fragrant and onion is translucent.
  3. Stir in lentils to coat evenly.
  4. Add salted herbs, organic seasoning, bay leaves, and water; bring to a boil.
  5. Reduce heat and simmer, partly covered, for about 25 minutes until lentils are tender.
  6. Add cooked cabbage and heat through.
