Vegan No-Bake Spice Cookies

Instructions
- Combine cashew butter and oats in a large bowl and set aside.
- In a small saucepan, mix coconut sugar, water, coconut oil, cinnamon, ginger, cloves, and salt. Bring to a boil over medium-high heat.
- Once boiling, set a timer for 2 minutes and let it boil without stirring.
- After 2 minutes, turn off the heat and pour the mixture into the bowl with oats and cashew butter. Stir to combine until sticky.
- Drop heaping tablespoons of the mixture onto a parchment-lined cookie sheet and flatten each cookie slightly.
- Allow cookies to cool completely at room temperature before serving.
