Vegan No-Bake Spice Cookies

Ingredients

  • ¼ cup cashew butter
  • 1 cup quick-cooking oats
  • ½ cup coconut sugar
  • 3 tablespoons water
  • 2 tablespoons coconut oil
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • teaspoon ground cloves
  • teaspoon fine sea salt

Instructions

  1. Combine cashew butter and oats in a large bowl and set aside.
  2. In a small saucepan, mix coconut sugar, water, coconut oil, cinnamon, ginger, cloves, and salt. Bring to a boil over medium-high heat.
  3. Once boiling, set a timer for 2 minutes and let it boil without stirring.
  4. After 2 minutes, turn off the heat and pour the mixture into the bowl with oats and cashew butter. Stir to combine until sticky.
  5. Drop heaping tablespoons of the mixture onto a parchment-lined cookie sheet and flatten each cookie slightly.
  6. Allow cookies to cool completely at room temperature before serving.
