Vegan No Bake Oatmeal Cookie Bites

fine shred unsweetened coconut (for coating, optional)
Instructions
- Blend the coconut and oats into a fine powder using a food processor.
- Add the currants and chocolate chips, and blend again to chop.
- Transfer the mixture to a large bowl and add almond butter, maple syrup, hemp seeds, vanilla, salt, and cinnamon.
- Stir until evenly combined and place the mixture in the freezer for 10 minutes to firm up.
- Scoop out 2 teaspoons of the mixture, roll into balls, and coat with fine coconut shreds if desired.
- Store the cookie bites in a freezer-safe container for up to 2 months.
- Let them stand at room temperature for a minute or two before eating.
