Ingredients

The base

  • cup ground oats
  • 1 cup almond flour
  • ¼ to ⅓ cup peanut flour, protein powder, or sifted coconut flour
  • 2 tbsp chia or flaxseed
  • ¼ cup natural nut butter
  • 1 tbsp cinnamon
  • ¼ cup maple syrup
  • ½ tsp vanilla
  • 1 tbsp molasses

Optional ingredients

  • 1 to 2 tbsp finely crushed/chopped nuts
  • 1 tbsp dark chocolate shavings
  • to taste none extra flour/cinnamon for topping

Instructions

  1. Grind oats in a food processor or blender and transfer to a mixing bowl.
  2. Add almond flour, peanut flour or protein powder, cinnamon, chia or flaxseed, and nut butter to the bowl.
  3. Mix the ingredients together, then add maple syrup, molasses, and vanilla, mixing again by hand.
  4. If desired, incorporate nuts and dark chocolate shavings.
  5. Adjust the mixture with more maple syrup or nut butter if it's too dry.
  6. Roll the mixture into 1-1.5 inch balls and coat them in crushed nuts if desired.
  7. Place the balls on a baking sheet lined with parchment paper.
  8. Freeze for 20-30 minutes, then transfer to a Ziploc bag.
  9. Dust with additional cinnamon and flour if desired and store in the fridge or freezer.
