Ingredients

The dough

  • 1 cup dried almond pulp flour
  • ¼ cup coconut oil, softened
  • ¼ cup pure maple syrup
  • 6 tablespoons raw almond butter
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon fine sea salt

For topping

  • as needed dark chocolate chips

Instructions

  1. Dry the almond pulp if not already done, using a dehydrator or oven.
  2. Pulse the dried almond pulp in a food processor to create a flour-like texture.
  3. Measure 1 cup of almond pulp flour using the scoop and swipe method.
  4. Combine the almond pulp flour with coconut oil, almond butter, maple syrup, vanilla, and sea salt in the food processor.
  5. Pulse until a sticky, uniform batter forms.
  6. Scoop the batter into bite-sized balls using a tablespoon.
  7. Roll the balls between your hands to smooth them out.
  8. Arrange the balls on a baking sheet lined with parchment paper.
  9. Press dark chocolate chips into each ball.
  10. Place the baking sheet in the fridge or freezer to set, about 10 minutes.
