Instructions
- Combine almond flour, coconut flour, sugar, peanut butter, melted coconut oil or butter, vanilla, and salt in a bowl and mix until the dough comes together.
- Fold in mini chocolate chips and refrigerate the dough for at least 10 minutes.
- Roll the dough into 24 small balls and place them on a parchment-lined baking sheet, then freeze for 15 minutes.
- Prepare the chocolate coating by melting mini chocolate chips, peanut butter, and coconut oil in a saucepan over medium heat.
- Dip each chilled cookie dough ball into the melted chocolate, ensuring they are fully coated, then return them to the parchment-lined baking sheet.
- Refrigerate or freeze until the chocolate coating hardens.
