Healthy Frozen Chocolate Chip Cookie Dough Bites

Instructions
- Line a cookie sheet with freezer paper.
- In a large bowl, whisk together the almond flour, protein powder, tapioca flour, and salt.
- Add the almond butter, maple syrup, and vanilla extract, and stir until combined.
- Add water one tablespoon at a time until the dough reaches a cookie dough consistency.
- Fold in the mini chocolate chips.
- Roll a heaping tablespoon of dough into a ball and place it on the prepared cookie sheet.
- Freeze the balls for about 2 hours until firm.
- Melt the chocolate in a microwave-safe bowl in 30-second increments, stirring after each.
- Stir in the oil if using, then dip each ball into the melted chocolate.
- Return the coated balls to the cookie sheet and freeze for about 10 minutes until the chocolate is set.
- Store the bites in an airtight container.
