Healthy Frozen Chocolate Chip Cookie Dough Bites

Instructions
- Line a cookie sheet tray with freezer paper.
- In a large bowl, whisk together the almond flour, protein powder, tapioca flour, and salt.
- Add in the almond butter, maple syrup, and vanilla extract, stirring until combined.
- Gradually add water, one tablespoon at a time, until reaching a cookie dough consistency.
- Fold in the mini chocolate chips.
- Roll a heaping tablespoon of dough into a ball and place on the prepared cookie sheet.
- Freeze the dough balls for about 2 hours until firm.
- Melt the chocolate in a microwave-safe bowl in 30-second increments, stirring after each until smooth.
- If using, stir in the oil to the melted chocolate.
- Dip each dough ball into the melted chocolate, tapping off excess, and return to the tray.
- Freeze for about 10 minutes until the chocolate is set.
- Store the cookie dough bites in an airtight container.
