Ingredients

The dough

  • ½ cup almond flour
  • ½ cup plant based protein powder
  • cup tapioca flour
  • ¼ tsp salt
  • ½ cup natural almond butter
  • ¼ cup maple syrup
  • ½ tsp vanilla extract
  • 1-4 Tbsp water
  • ¼ cup mini chocolate chips

The coating

  • ½ cup chocolate (for melting)
  • 1 tsp oil of choice (optional)

Instructions

  1. Line a cookie sheet tray with freezer paper.
  2. In a large bowl, whisk together the almond flour, protein powder, tapioca flour, and salt.
  3. Add in the almond butter, maple syrup, and vanilla extract, stirring until combined.
  4. Gradually add water, one tablespoon at a time, until reaching a cookie dough consistency.
  5. Fold in the mini chocolate chips.
  6. Roll a heaping tablespoon of dough into a ball and place on the prepared cookie sheet.
  7. Freeze the dough balls for about 2 hours until firm.
  8. Melt the chocolate in a microwave-safe bowl in 30-second increments, stirring after each until smooth.
  9. If using, stir in the oil to the melted chocolate.
  10. Dip each dough ball into the melted chocolate, tapping off excess, and return to the tray.
  11. Freeze for about 10 minutes until the chocolate is set.
  12. Store the cookie dough bites in an airtight container.
