Ingredients

  • cups quick cooking oats
  • ¼ cup all-natural peanut butter
  • ½ teaspoon vanilla extract
  • pinch salt
  • ¼ cup vegan butter (or coconut oil)
  • 1 cup coconut sugar
  • ¼ cup water

Instructions

  1. Combine the oats, peanut butter, vanilla, and salt in a large bowl and set aside.
  2. In a saucepan, combine the vegan butter, coconut sugar, and water, and bring to a boil.
  3. Once boiling, set a timer for 2 minutes and 30 seconds and let it boil without stirring.
  4. After the timer goes off, remove from heat and pour the mixture over the oats.
  5. Stir well to coat the oats evenly.
  6. Scoop the dough onto a lined baking sheet using a heaping tablespoon and flatten slightly.
  7. Let the cookies cool at room temperature or place them in the fridge or freezer to firm up.
