Peach Earl Grey Jam

Ingredients

  • 5 pounds ripe peaches
  • 4 cups sugar
  • 2 Tbsp. fresh lemon juice
  • 4 bags Earl Grey tea
  • 1 Tbsp. vanilla extract

Instructions

  1. Blanch peaches by cutting a small X in the bottom and boiling them for 1-2 minutes, then transfer to ice water.
  2. Peel, halve, and pit the peaches, then slice them into 1/3 inch pieces and mix with sugar and lemon juice in a bowl for 30 minutes.
  3. Place a small plate in the freezer to test the jam's consistency later.
  4. Transfer the fruit mixture and tea bags to a heavy pot, bring to a boil while stirring gently, and cook for 30-90 minutes, testing for thickness.
  5. Remove the tea bags, skim foam from the jam, and ladle it into clean, hot jars.
  6. Wipe the rims, seal the jars, and process in a boiling water bath for 10 minutes.
