Instructions
- Blanch peaches by cutting a small X in the bottom and boiling them for 1-2 minutes, then transfer to ice water.
- Peel, halve, and pit the peaches, then slice them into 1/3 inch pieces and mix with sugar and lemon juice in a bowl for 30 minutes.
- Place a small plate in the freezer to test the jam's consistency later.
- Transfer the fruit mixture and tea bags to a heavy pot, bring to a boil while stirring gently, and cook for 30-90 minutes, testing for thickness.
- Remove the tea bags, skim foam from the jam, and ladle it into clean, hot jars.
- Wipe the rims, seal the jars, and process in a boiling water bath for 10 minutes.
