Ingredients

  • 2-3 large ripe peaches, peeled and pitted
  • 1 cup cane sugar
  • 1 cup filtered water

Instructions

  1. Combine peach pieces, sugar, and water in a medium saucepan.
  2. Bring the mixture to a boil over medium heat, mashing the peaches against the side of the pan.
  3. Simmer for 5 minutes, then remove from heat and cover for 30 minutes.
  4. For clear syrup, pour the mixture through a fine-mesh strainer into a jar or storage container.
  5. If desired, add some of the fruit back into the syrup.
  6. For thicker syrup, blend the mixture using a blender or immersion blender.
