Easy Peach Butter

Instructions
- 1. Place the chopped peaches in a large pot and stir in the sugar, cinnamon, and lemon juice.
- 2. Heat the mixture over medium heat for 30 minutes, stirring occasionally.
- 3. Remove from heat and stir in the vanilla extract.
- 4. Use an immersion blender to puree the peach mixture to your desired consistency.
- 5. Let the peach butter cool to room temperature, then transfer to jars and store in the refrigerator.
