Ingredients

The base

  • 20 oz refrigerated shredded hash brown potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • teaspoon ground black pepper

The filling

  • ½ cup chopped onion
  • cup diced bell pepper
  • 1 lb uncooked 95% lean ground beef
  • 1 tablespoon Cajun or blackened seasoning

The sauce

  • 3 tablespoons light butter
  • 3 tablespoons flour
  • 1 ½ cups skim milk
  • 8 oz 50% reduced fat Pepper Jack cheese, shredded

Instructions

  1. Preheat the oven to 375°F and prepare a 9x13 baking dish.
  2. Mix the shredded potatoes with 2 tablespoons of olive oil, salt, and pepper, then press into the baking dish to form a crust and bake for 35 minutes.
  3. While the potatoes bake, melt the butter in a saucepan, whisk in the flour, then gradually add the milk and cheese to create a sauce.
  4. In a skillet, heat the remaining oil and sauté the onion and bell pepper until softened, then add the ground beef and seasoning until cooked through.
  5. Once the potatoes are done, layer the beef mixture over the crust, pour the cheese sauce on top, and bake for an additional 15-20 minutes.
