BBQ Beef Stuffed Potatoes

Instructions
- Preheat the oven to 400°F.
- Wash and dry the potatoes, then prick them with a fork.
- Rub each potato with vegetable oil and sprinkle with salt.
- Place the potatoes on a foil-covered baking sheet and bake for one hour until tender.
- While the potatoes are baking, thaw and reheat the shredded beef, mixing in ¼ cup of BBQ sauce.
- Slice the green onion thinly.
- Once the potatoes are done, slice them lengthwise and push the ends to pop them open.
- Stuff each potato with half of the BBQ beef mixture and top with 2 tablespoons of shredded cheese.
- Return the potatoes to the oven for a few minutes until the cheese melts.
- Drizzle 1 tablespoon of BBQ sauce over each potato, sprinkle with green onions, and add a dollop of sour cream before serving.
