BBQ Beef Stuffed Potatoes

Ingredients

The potatoes

  • 2 large russet potatoes
  • 1 tsp vegetable oil
  • 1 pinch salt

The filling

  • 1 cup Multi-Purpose Shredded Beef
  • ¼ cup BBQ sauce
  • 2 Tbsp BBQ sauce
  • ¼ cup shredded cheddar cheese
  • 1 whole green onion
  • 2 Tbsp sour cream

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and dry the potatoes, then prick them with a fork.
  3. Rub each potato with vegetable oil and sprinkle with salt.
  4. Place the potatoes on a foil-covered baking sheet and bake for one hour until tender.
  5. While the potatoes are baking, thaw and reheat the shredded beef, mixing in ¼ cup of BBQ sauce.
  6. Slice the green onion thinly.
  7. Once the potatoes are done, slice them lengthwise and push the ends to pop them open.
  8. Stuff each potato with half of the BBQ beef mixture and top with 2 tablespoons of shredded cheese.
  9. Return the potatoes to the oven for a few minutes until the cheese melts.
  10. Drizzle 1 tablespoon of BBQ sauce over each potato, sprinkle with green onions, and add a dollop of sour cream before serving.
