BBQ Brisket Twice Baked Potato

Ingredients

The potatoes

  • 3 pieces Russet Potatoes

The filling

  • cups Shredded Cheddar Cheese
  • ½ cup Melted Butter
  • 1 lb Moist Brisket Chopped
  • ½ cup Heavy Whipping Cream
  • cup Sour Cream
  • ¼ tsp Sea Salt
  • ¼ tsp Black Pepper
  • 3 tbsp Olive Oil
  • 1 tbsp Chives Chopped

Instructions

  1. Wash the potatoes and dry them, then poke holes with a fork and coat with olive oil.
  2. Preheat the oven to 400°F and bake the potatoes unwrapped for 1 hour.
  3. Cut the baked potatoes lengthwise, scoop out the insides, and place them in a bowl.
  4. Add melted butter, chopped chives, heavy whipping cream, sour cream, sea salt, and black pepper to the potato insides and mash together.
  5. Chop the brisket into small chunks and add it to the potato mixture along with cheddar cheese, saving some for topping.
  6. Scoop the mixture back into the potato skins and top with remaining cheddar cheese and brisket.
  7. Bake the stuffed potatoes at 400°F for 15 minutes.
  8. Serve hot topped with barbecue sauce and a dollop of sour cream if desired.
