BBQ Brisket Twice Baked Potato

Instructions
- Wash the potatoes and dry them, then poke holes with a fork and coat with olive oil.
- Preheat the oven to 400°F and bake the potatoes unwrapped for 1 hour.
- Cut the baked potatoes lengthwise, scoop out the insides, and place them in a bowl.
- Add melted butter, chopped chives, heavy whipping cream, sour cream, sea salt, and black pepper to the potato insides and mash together.
- Chop the brisket into small chunks and add it to the potato mixture along with cheddar cheese, saving some for topping.
- Scoop the mixture back into the potato skins and top with remaining cheddar cheese and brisket.
- Bake the stuffed potatoes at 400°F for 15 minutes.
- Serve hot topped with barbecue sauce and a dollop of sour cream if desired.
