Ingredients

The potatoes

  • 4 pieces russet potatoes

The filling

  • 16 ounces fresh mushrooms, sliced
  • 2 pounds chicken thighs or chicken breasts
  • ½ to 1 cup barbecue sauce
  • 1 cup garlic herb spreadable cheese or garlic herb goat cheese
  • 2 handfuls fresh spinach
  • to taste spices garlic powder, onion powder, salt, and pepper

The toppings

  • to taste none chives
  • to taste none crunchy onions
  • to taste none blue cheese crumbles

Instructions

  1. Preheat the oven to 425°F and poke holes in the potatoes before roasting them for 60 minutes.
  2. On a separate sheet pan, toss the mushrooms and chicken with olive oil and spices, then roast for 30 minutes. Shred the chicken and mix both with BBQ sauce.
  3. Cut the baked potatoes in half, scoop out some flesh, and mix it with the garlic herb cheese and spinach until creamy. Season as needed.
  4. Fill the potato skins with the spinach filling, top with the chicken and mushrooms, add more BBQ sauce, and any desired toppings.
