Loaded BBQ Baked Potatoes

Instructions
- Preheat the oven to 425°F and poke holes in the potatoes before roasting them for 60 minutes.
- On a separate sheet pan, toss the mushrooms and chicken with olive oil and spices, then roast for 30 minutes. Shred the chicken and mix both with BBQ sauce.
- Cut the baked potatoes in half, scoop out some flesh, and mix it with the garlic herb cheese and spinach until creamy. Season as needed.
- Fill the potato skins with the spinach filling, top with the chicken and mushrooms, add more BBQ sauce, and any desired toppings.
