Ingredients

The potatoes

  • 4 pieces russet potatoes (7 - 9 oz each)

The brine

  • ½ cup warm water
  • 2 Tbsp salt

The oil

  • 1 Tbsp vegetable oil

Toppings

  • to taste butter
  • to taste pepper
  • to taste cheddar
  • to taste chives
  • to taste bacon
  • to taste sour cream

Instructions

  1. Preheat the oven to 450 degrees F and place a wire rack over a rimmed baking sheet.
  2. Scrub and rinse each potato, then pierce each potato 6 times with a fork.
  3. In a large bowl, whisk together warm water and salt until dissolved, then roll each potato in the salt water mixture.
  4. Transfer the potatoes to the wire rack and bake until the center registers 205 degrees F.
  5. Brush the potatoes with vegetable oil and return to the oven for an additional 10 minutes.
  6. Remove from the oven, cut a slit across each potato to release steam, and serve with desired toppings.
