Ingredients

The potatoes

  • 4 large baking potatoes

The toppings

  • to taste flaky sea salt
  • to taste butter or olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and place a rack in the center.
  2. Scrub the potatoes and prick them all over with a fork, then sprinkle generously with sea salt.
  3. Bake the potatoes for about 1 hour, or until tender throughout.
  4. Test for doneness by sliding a knife into the potatoes; it should meet little resistance.
  5. Remove from the oven and allow to cool slightly.
  6. Slice a cross into the top of each potato and push the ends to open them up.
  7. Add butter or olive oil and any desired toppings before serving.
