Ingredients

The potatoes

  • 1 to 4 medium Russet potatoes (7 to 9 ounces each)

The toppings

  • 1 tablespoon melted butter or extra-virgin olive oil
  • to taste none Flaky sea salt or kosher salt
  • to taste none Desired toppings (e.g., sour cream, butter, chives, salt and pepper)

Instructions

  1. Preheat the oven to 450°F with a rack in the middle.
  2. Scrub the potatoes clean and prick them with a fork about ¼-inch deep, six to eight times per potato.
  3. Place the potatoes on a cooling rack or directly on the oven rack and bake for 45 minutes to 1 hour until tender.
  4. Remove the potatoes and brush each with melted butter or oil, then sprinkle with salt.
  5. Return the potatoes to the oven and bake for an additional 10 minutes for crispy skin.
  6. Cut slits across the top of each potato and gently push the ends towards the center to fluff the insides.
  7. Add desired toppings and serve immediately.
