Ingredients

The potatoes

  • 4 medium russet potatoes

The seasoning

  • 1 tablespoon avocado oil or olive oil
  • to taste kosher salt or coarse sea salt

Instructions

  1. Preheat the oven to 425°F and position the oven rack in the center.
  2. Wash and dry the potatoes, then place them on a baking sheet.
  3. Poke each potato with a fork 3-4 times to prevent them from exploding.
  4. Rub each potato with oil and sprinkle with salt.
  5. Bake the potatoes for 50-60 minutes until fork-tender or the internal temperature reaches 210°F.
  6. Remove from the oven and make a deep cut lengthwise in each potato.
  7. Press the ends of the potato to create an opening and fluff the inside with a fork before serving.
