Dressing Ingredients

  • 1 each ripe peach, pit removed & cut into chunks
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons water
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Peach Salad Assembly

  • 1 bunch kale (about 8 cups)
  • 1 each ripe peach
  • ½ each avocado
  • ½ each red onion
  • 1 cup cooked chickpeas

Instructions

  1. Prepare the dressing by blending the chopped peach, vinegar, oil, water, honey, salt, and pepper until smooth. Adjust sweetness if necessary and set aside.
  2. Wash and remove the tough stems from the kale, then chop into bite-sized pieces. Place in a large bowl and drizzle with some dressing, massaging it into the leaves.
  3. Add the remaining salad ingredients: sliced peach, avocado, red onion, and chickpeas. Toss gently and serve immediately with extra dressing if desired.
