Peach Salad Assembly

Instructions
- Prepare the dressing by blending the chopped peach, vinegar, oil, water, honey, salt, and pepper until smooth. Adjust sweetness if necessary and set aside.
- Wash and remove the tough stems from the kale, then chop into bite-sized pieces. Place in a large bowl and drizzle with some dressing, massaging it into the leaves.
- Add the remaining salad ingredients: sliced peach, avocado, red onion, and chickpeas. Toss gently and serve immediately with extra dressing if desired.
