Ingredients

Green Salad

  • ½ small red onion
  • 10 to 12 ounces baby arugula
  • 2 medium ripe peaches or nectarines
  • 2 medium ripe avocados
  • cup unsalted sliced almonds
  • cup crumbled mild blue cheese

Lemon Dressing

  • ¼ cup extra virgin olive oil
  • ¼ cup freshly squeezed lemon juice
  • ½ teaspoon Dijon mustard
  • 1 clove garlic
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Soak the red onion in water to reduce its sharpness while preparing the salad.
  2. Place the arugula in a large serving bowl.
  3. Toast the almonds in a skillet over medium-low heat until fragrant and golden, then set aside.
  4. Prepare the dressing by whisking together olive oil, lemon juice, mustard, garlic, salt, and pepper.
  5. Drizzle half of the dressing over the arugula and toss to coat.
  6. Drain the red onion and add it to the salad, along with the peaches, avocados, toasted almonds, and blue cheese.
  7. Just before serving, drizzle more dressing over the salad and toss gently to combine.
