Instructions
- Soak the red onion in water to reduce its sharpness while preparing the salad.
- Place the arugula in a large serving bowl.
- Toast the almonds in a skillet over medium-low heat until fragrant and golden, then set aside.
- Prepare the dressing by whisking together olive oil, lemon juice, mustard, garlic, salt, and pepper.
- Drizzle half of the dressing over the arugula and toss to coat.
- Drain the red onion and add it to the salad, along with the peaches, avocados, toasted almonds, and blue cheese.
- Just before serving, drizzle more dressing over the salad and toss gently to combine.
