Raspberry, Walnut & Avocado Kale Salad

Ingredients

The salad

  • 1 bunch curly kale, destemmed and chopped
  • ¼ tsp salt
  • ½ red onion sliced thinly
  • ½ cup walnuts, chopped
  • 1 medium avocado, cubed
  • 1 6oz container raspberries
  • cup feta cheese (optional)

The dressing

  • 2 tbsp champagne wine vinegar (or apple cider vinegar)
  • 2 tbsp extra virgin olive oil
  • 1 tsp pure maple syrup (or honey)
  • ¼ tsp salt
  • to taste freshly ground pepper

Instructions

  1. Massage chopped kale with salt in a large bowl until the leaves darken in color.
  2. Whisk together the dressing ingredients and pour over the salad, massaging the dressing into the kale for about a minute.
  3. Add red onion, walnuts, avocado, raspberries, and feta to the salad and toss to combine.
  4. Season with additional salt and pepper to taste.
