Spicy Maple Tofu Bowls with Golden Garlic Rice

Instructions
- Cook the rice by heating olive oil in a saucepan, adding garlic and turmeric, then stirring in the rice and vegetable stock. Bring to a boil, then simmer until the rice is tender.
- Prepare the tofu by cutting it into cubes, pressing out moisture, and tossing with arrowroot, salt, and pepper.
- Make the glaze by whisking together maple syrup, sambal oelek, Tamari, rice vinegar, and garlic in a bowl.
- Trim the broccolini and steam it in a skillet with water until bright green but firm.
- In the same skillet, heat olive oil and brown the tofu on both sides until crispy.
- Add the tofu back to the skillet, pour in the glaze, and simmer until the sauce thickens.
- Toss the broccolini in the skillet with the tofu and sauce.
- Serve the tofu and broccolini over the golden garlic rice, garnished with sliced green onions.
