Ingredients

Golden Garlic Rice

  • 2 teaspoons olive oil
  • 1 clove garlic, finely grated
  • ½ teaspoon ground turmeric
  • 1 cup short grain brown rice, rinsed and drained
  • cups vegetable stock
  • to taste sea salt and ground black pepper

Tofu and Broccolini

  • 1 lb firm tofu, drained
  • 1 tablespoon arrowroot starch
  • to taste sea salt and ground black pepper
  • ¼ cup maple syrup
  • 3 tablespoons unseasoned rice vinegar
  • 2 tablespoons sambal oelek or gochujang
  • 2 tablespoons Tamari
  • 1 clove garlic, finely grated
  • 1 bunch broccolini
  • ¼ cup olive oil
  • to taste sliced green onions, for garnish

Instructions

  1. Cook the rice by heating olive oil in a saucepan, adding garlic and turmeric, then stirring in the rice and vegetable stock. Bring to a boil, then simmer until the rice is tender.
  2. Prepare the tofu by cutting it into cubes, pressing out moisture, and tossing with arrowroot, salt, and pepper.
  3. Make the glaze by whisking together maple syrup, sambal oelek, Tamari, rice vinegar, and garlic in a bowl.
  4. Trim the broccolini and steam it in a skillet with water until bright green but firm.
  5. In the same skillet, heat olive oil and brown the tofu on both sides until crispy.
  6. Add the tofu back to the skillet, pour in the glaze, and simmer until the sauce thickens.
  7. Toss the broccolini in the skillet with the tofu and sauce.
  8. Serve the tofu and broccolini over the golden garlic rice, garnished with sliced green onions.
