Ingredients

The base

  • 2 ¼ cups rolled oats
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 3 small bananas
  • 2 large eggs
  • ¼ cup maple syrup
  • 1 ½ cups almond milk
  • 1 tsp vanilla

The toppings

  • 1 cup chopped walnuts
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 375°F and grease an 8×8 baking dish.
  2. In a medium bowl, mix the rolled oats, baking soda, salt, and cinnamon.
  3. In a large bowl, mash the bananas and whisk in the eggs, maple syrup, almond milk, and vanilla.
  4. Combine the dry ingredients with the wet ingredients and stir until mixed.
  5. Fold in half of the walnuts and half of the chocolate chips.
  6. Pour the mixture into the greased baking dish and top with the remaining walnuts and chocolate chips.
  7. Bake for 45 minutes and let cool slightly before serving.
