Instructions
- Preheat the oven to 375°F.
- Mash the bananas until you have about 1.5 cups.
- In a large bowl, mix the mashed bananas with peanut butter, eggs, brown sugar, vanilla, baking powder, and salt until smooth.
- Add the milk and whisk until combined.
- Stir in the rolled oats, chocolate chips, and shredded coconut until evenly mixed.
- Lightly coat an 8x8 inch casserole dish with non-stick spray and pour in the mixture.
- Bake for 45 minutes, then serve.
