Instructions
- Preheat the oven to 350°F (180°C) and grease 12 muffin cups or line with paper muffin liners.
- In a large bowl, combine the oats, cinnamon, and salt.
- Mix in the mashed bananas, maple syrup, vanilla extract, and flax egg, stirring to combine while adding the almond milk.
- Fold in the chocolate chips and walnuts, leaving some for topping if desired.
- Scoop the mixture into the muffin cups using a 1/4 cup measuring cup, filling each cup equally.
- Top each cup with a slice of banana or dried banana to prevent browning.
- Bake for 30 minutes until slightly springy to the touch.
- Allow to cool for 5 minutes, then remove from the cups and place on a cooling rack to cool completely.
