Ingredients

  • 3 cups old fashioned gluten free certified oats
  • 1 teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • 1 ½ cups almond milk
  • ½ cup mashed very ripe bananas
  • ¼ cup maple syrup
  • ½ teaspoon vanilla extract
  • 1 flax egg or vegan egg substitute flax egg
  • ¼ cup chopped walnuts
  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C) and grease 12 muffin cups or line with paper muffin liners.
  2. In a large bowl, combine the oats, cinnamon, and salt.
  3. Mix in the mashed bananas, maple syrup, vanilla extract, and flax egg, stirring to combine while adding the almond milk.
  4. Fold in the chocolate chips and walnuts, leaving some for topping if desired.
  5. Scoop the mixture into the muffin cups using a 1/4 cup measuring cup, filling each cup equally.
  6. Top each cup with a slice of banana or dried banana to prevent browning.
  7. Bake for 30 minutes until slightly springy to the touch.
  8. Allow to cool for 5 minutes, then remove from the cups and place on a cooling rack to cool completely.
