Ingredients

  • 3 large eggs
  • 1 cup coconut sugar
  • cup almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons dark cocoa powder
  • 2 tablespoons prepared coffee
  • 1 teaspoon vanilla extract
  • 1 ¼ cups dairy-free chocolate chips
  • 10 tablespoons refined coconut oil

Instructions

  1. Preheat the oven to 325ºF and line a 9×9 baking dish with parchment paper.
  2. In a medium bowl, beat the eggs and coconut sugar on high until light and fluffy.
  3. Stir in almond flour, coconut flour, dark cocoa powder, cooled coffee, and vanilla extract until combined.
  4. In a microwave-safe bowl, combine 1 cup of chocolate chips and coconut oil, microwaving in bursts until melted and smooth.
  5. Pour the melted chocolate mixture into the brownie batter and stir to combine.
  6. Fold in the remaining ¼ cup of chocolate chips.
  7. Pour the batter into the prepared pan, ensuring it fills all corners.
  8. Bake for 35-40 minutes, checking for moist crumbs with a toothpick.
  9. Let cool completely before lifting out and cutting into 9 squares.
