Instructions
- Preheat the oven to 325ºF and line a 9×9 baking dish with parchment paper.
- In a medium bowl, beat the eggs and coconut sugar on high until light and fluffy.
- Stir in almond flour, coconut flour, dark cocoa powder, cooled coffee, and vanilla extract until combined.
- In a microwave-safe bowl, combine 1 cup of chocolate chips and coconut oil, microwaving in bursts until melted and smooth.
- Pour the melted chocolate mixture into the brownie batter and stir to combine.
- Fold in the remaining ¼ cup of chocolate chips.
- Pour the batter into the prepared pan, ensuring it fills all corners.
- Bake for 35-40 minutes, checking for moist crumbs with a toothpick.
- Let cool completely before lifting out and cutting into 9 squares.
