Fudgy Paleo Brownies

Instructions
- Preheat the oven to 350°F and line an 8 x 8-inch metal baking pan with parchment paper.
- In a stand mixer, combine coconut sugar, salt, eggs, egg yolk, coffee, and vanilla, then whip until thick and lighter in color, about 8 minutes.
- In a separate bowl, combine avocado oil and chocolate chips, then microwave for 1 minute and whisk until smooth.
- Sift together cocoa powder and almond flour, then set aside.
- Reduce mixer speed to low and add melted chocolate mixture, then mix until combined.
- Add sifted cocoa and almond flour to the mixer and mix until incorporated.
- Stir the batter with a spatula to ensure uniformity, then pour it into the prepared pan.
- Bake for 27 to 30 minutes until shiny on top and a toothpick comes out with a few crumbs.
- Cool in the pan to room temperature, then remove using parchment and cut into 16 squares.
