Instructions
- Slice the smoked sausage into medallions and sauté in olive oil until browned.
- Remove the sausage and sauté diced onion, bell pepper, celery, and minced garlic until soft.
- Rinse and sort the red beans, then add them to the pot along with the sausage, thyme, oregano, paprika, cayenne, black pepper, chicken broth, and water.
- Secure the lid and cook on high pressure for 35 minutes, then let it naturally release pressure.
- Check the beans for tenderness; if not soft, cook for an additional 20 minutes on high pressure.
- Once soft, stir and smash the beans against the pot to thicken the liquid. Add salt to taste.
- Serve the beans in bowls topped with rice and sliced green onions.
