Instructions
- Remove the lobster meat from the shells using kitchen shears.
- Pat the lobster meat dry with paper towels.
- Heat a skillet over medium-low heat and add water and butter, whisking as the butter melts.
- Add minced garlic and cook until fragrant.
- Add smoked paprika and cayenne pepper, if using.
- Place the lobster tails in the poaching liquid and cook, turning every 1-2 minutes, until opaque and cooked through.
- Serve with the poaching liquid and lemon wedges.
