Butter Poached Lobster

Ingredients

The lobster

  • 4 oz Lobster tails

The poaching liquid

  • ¾ cup Salted butter
  • 3 tbsp Water
  • 4 cloves Garlic
  • ½ tsp Smoked paprika
  • 1 pinch Cayenne pepper

For serving

  • to taste Lemon wedges

Instructions

  1. Remove the lobster meat from the shells using kitchen shears.
  2. Pat the lobster meat dry with paper towels.
  3. Heat a skillet over medium-low heat and add water and butter, whisking as the butter melts.
  4. Add minced garlic and cook until fragrant.
  5. Add smoked paprika and cayenne pepper, if using.
  6. Place the lobster tails in the poaching liquid and cook, turning every 1-2 minutes, until opaque and cooked through.
  7. Serve with the poaching liquid and lemon wedges.
